NOTES
Each varietal was harvested separately and whole cluster pressed for barrel fermentation. The Pinot Grigio was fermented in 75-gallon stainless steel barrels and the Chenin Blanc in neutral oak using native, ambient yeasts. Barrels were stirred daily until dry, followed by a small sulfur addition to prevent secondary fermentation.

The barrels for this wine were selected during our blending trials for their giving aromatics and youthful energy. Each barrel was separated from its primary lees, blended into tank and then returned to barrel for a brief élevage. Before bottling our whites, we chill them. This allows naturally occurring solids to develop and drop to the bottom of the tank. To preserve texture and character, we carefully bottled the wine unfiltered, leaving the solids behind.
