Native fermentation in 75-gallon neutral hogsheads, with the only sulfur added used to block malolactic fermentation. Bottled unfiltered. This single-vineyard bottling is a dry, Mediterranean-style white made from 100% Picpoul Blanc grown right in town. Crisp acidity frames a riper expression of citrus this vintage—still bright, with a touch more flesh and depth. After trialing the varietal last year, we moved it to a single-vineyard selection: the fruit was simply too good not to give it its own bottling. Only 90 cases were produced.
